The Stuffed Avocados make excellent entrée or side dishes, or you can be your main dish too. Like we said in other posts, avocados are loaded with good fats and fiber, so they are pretty filling and healthy too!

Tropical Shrimp
You will not believe how easy this is to make. The delish factor is in direct proportion with its simplicity.

Tropical Shrimp Stuffed Avocado
Ingredients
- 1 lb. cooked shrimp peeled, deveined, tail-off, chopped
- 1/3 cup onion finely chopped
- 1/3 cup chopped cilantro
- 1/3 cup pineapple fresh, cut into small cubes
- 1 lemon juiced
- 1 tbsp olive oil
- Salt and pepper to taste
- 1 tbsp Tabasco sauce optional
- 2 avocados halved and pit removed
Instructions
- In a large bowl mix the first eight ingredients and refrigerate for one hour while they marinate.
- When you are ready to serve, halve the avocados and remove their pits. Lightly salt and pepper them, stuff the four halves with the shrimp mix and enjoy!

Pecan Dip
While this avocado recipe is plenty refreshing for any hot summer day, it is elegant and sophisticated enough if you are entertaining a small crowd.
It calls for only five ingredients and is ready to serve in under 30 minutes!
Pecan Dip Stuffed Avocados
Ingredients
- 1 package cream cheese 8 oz, softened
- 1/4 cup sour cream
- 4 tbsp lemon juice divided, two tbsp and two tbsp
- salt and pepper to taste
- 1 3/4 cups pecan chopped
- 3 avocados halved, pit removed
Instructions
- Place cheese, cream and 2 tbsp lemon juice in a mixer bowl. Mix on "High" until creamy. Salt and pepper to taste.
- Add the chopped pecans and mix on "Low" until all the ingredients have integrated. Let dip rest at room temperature for 20 minutes.
- When you are ready to serve, halve the avocados, remove the pits, cover with remaining lemon juice, lightly salt and pepper them and stuff with the pecan dip. Garnish with pecan halves, fresh basil or cilantro leaves.
Creamy Tuna
Honestly, these are so versatile, inexpensive and tasty that you can serve them any time! Whether you have them for lunch, a light supper, a snack or an appetizer, these avocados are always great and nutritious.
Creamy Tuna Stuffed Avocados
Ingredients
- 1 package cream cheese 8 oz., softened
- 2 tbsp lemon juice
- 1 tbsp Worcester sauce
- 2 cans tuna 5 oz each, drained
- 2 tbsp fresh cilantro finely chopped
- 1 tbsp sliced scallions optional
- salt and pepper to taste
- 4 avocados halved, pit removed
Instructions
- By hand or using a mixer, combine cream cheese, lemon juice and Worcester sauce until fully soft.
- Using a fork add the drained tuna, the chopped cilantro and salt and pepper to the cheese mix and combine well.
- When you are ready to serve, halve the avocados, remove the pits, lightly salt and pepper each half and fill with the creamy tuna mix.
