Tropical Shrimp Stuffed Avocado

Ingredients
  

  • 1 lb. cooked shrimp peeled, deveined, tail-off, chopped
  • 1/3 cup onion finely chopped
  • 1/3 cup chopped cilantro
  • 1/3 cup pineapple fresh, cut into small cubes
  • 1 lemon juiced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 tbsp Tabasco sauce optional
  • 2 avocados halved and pit removed

Instructions
 

  • In a large bowl mix the first eight ingredients and refrigerate for one hour while they marinate.
  • When you are ready to serve, halve the avocados and remove their pits. Lightly salt and pepper them, stuff the four halves with the shrimp mix and enjoy!

Notes

You can remove the skin of the avocados if you so desire.
