Happy 2025! And I know, I know, January it’s all about healthy eating. What if I told you you don’t have to feel guilty about this Super Easy Finger-Licking Chipotle Creamy Sauce Shrimp? Nope, not one bit.

I have to say, coming up with a blog entry title that conveys in a few words all the deliciousness of this dish was harder, and almost took me longer, than actually making this Super Easy Finger-Licking Chipotle Creamy Sauce Shrimp.

And, before you start to tell me all about your keeping a tight leash on your calorie intake, let me disabuse you real quick about this enticingly yummy creamy sauce, because it is actually healthy. I use cottage cheese and milk as the base for it. The other ingredients are canned chipotles plus a few pantry staples.

I like my creamy sauce thicker, so I don’t add more than 1 or 2 tablespoons of milk to the ingredients, just enough to keep the blender going.

Like I said above, all the ingredients are pantry, every day, staples. So, in brief, this is a delicious and easy, albeit fancy dish that you and your famiy will enjoy in 30 minutes tops. It is an absolute no-brainer, no?

Super Easy Finger-Licking Chipotle Creamy Sauce Shrimp

Ingredients
  

  • 2 tbsp olive oil
  • 1/4 wedge white or red onion finely chopped
  • 3 cloves garlic finely chopped
  • 2 lbs large raw shrimp peeled, deveined and tail-off
  • For the creamy Chipotle Sauce:
  • 1 cup cottage cheese
  • 2 – 3 tbsp milk
  • 1 – 2 units canned chipotles to taste. Add just one if you are sensitive to chile pungency.
  • 1 – 2 tbsp adobo sauce from canned chipotles
  • 2 cloves garlic
  • 1/4 wedge onion
  • 1 cube shrimp or chicken bouillon
  • freshly ground pepper

Instructions
 

  • In a large skillet warm up the olive oil over medium heat. Add the chopped onion and garlic and sautee until tender. Add the shrimp and cook, stirring often, for about 5 minutes until it has changed color and is opaque and thoroughly cooked.
  • Make the Creamy Chipotle Sauce: combine all sauce ingredients in the blender and process until smooth.
  • Pour the sauce into the skillet, toss the shrimp in it and cook for 2 – 3 minutes. Enjoy in tacos, or with rice.

Notes

If your sauce turned out thin, you can dissolve 2 tbsp of corn starch in cold water and milk, add this to the sauce and stir often and cook until the sauce thickens.
