Super Easy Finger-Licking Chipotle Creamy Sauce Shrimp

Ingredients
  

  • 2 tbsp olive oil
  • 1/4 wedge white or red onion finely chopped
  • 3 cloves garlic finely chopped
  • 2 lbs large raw shrimp peeled, deveined and tail-off
  • For the creamy Chipotle Sauce:
  • 1 cup cottage cheese
  • 2 - 3 tbsp milk
  • 1 - 2 units canned chipotles to taste. Add just one if you are sensitive to chile pungency.
  • 1 - 2 tbsp adobo sauce from canned chipotles
  • 2 cloves garlic
  • 1/4 wedge onion
  • 1 cube shrimp or chicken bouillon
  • freshly ground pepper

Instructions
 

  • In a large skillet warm up the olive oil over medium heat. Add the chopped onion and garlic and sautee until tender. Add the shrimp and cook, stirring often, for about 5 minutes until it has changed color and is opaque and thoroughly cooked.
  • Make the Creamy Chipotle Sauce: combine all sauce ingredients in the blender and process until smooth.
  • Pour the sauce into the skillet, toss the shrimp in it and cook for 2 - 3 minutes. Enjoy in tacos, or with rice.

Notes

If your sauce turned out thin, you can dissolve 2 tbsp of corn starch in cold water and milk, add this to the sauce and stir often and cook until the sauce thickens.
