I will be sharing other enticingly delicious and refreshing recipes in which avocados take center stage. The whole idea is to kick off this summer with a series of avocado ideas that go beyond Guacamole. Certainly, this savory Avocado Mousse is not the exception.
The Avocado Mousse calls for just a handful of ingredients. And in all likelihood you already have all or most of them handy in your pantry and your fridge. You can fix it in a jiffy.
It is the perfect appetizer for a hot day, it is light and creamy and so full of flavor!

Avocado Mousse
Ingredients
- 3 units avocados
- 1 tbsp Worcester sauce
- 3 tbsp lemon juice freshly squeezed
- 1/2 tsp onion powder
- 1/4 tsp salt
- 1 cube chicken bouillon
- 5 sprigs fresh cilantro rinsed and chopped
- 3/4 cup light mayo
- 1-12 oz can evaporated milk
- 2 envelopes unflavored gelatin
- 3 tbsp cold water
- 1/4 cup boiling water
Instructions
- In the blender, sprinkle the unflavored gelatin over the cold water and let it stand for one minute. Add the boiling water and process for 1 minute on high until all granules of gelatin have completely dissolved.
- Add the rest of the ingredients to the blender and process until smooth.
- Pour into individual ramekins and chill in the fridge until set.
- Serve chilled with your favorite saltines or crackers. You can also unmold the mousse and garnish if you desire.
