In the blender, sprinkle the unflavored gelatin over the cold water and let it stand for one minute. Add the boiling water and process for 1 minute on high until all granules of gelatin have completely dissolved.
Add the rest of the ingredients to the blender and process until smooth.
Pour into individual ramekins and chill in the fridge until set.
Serve chilled with your favorite saltines or crackers. You can also unmold the mousse and garnish if you desire.
