What did I tell you? That I got you covered on the Guacamole front for your Super Bowl party. I have kept my end of the bargain with this Three-Dip Field. Or this Guacamole made the old fashioned way. But I am pretty sure these Amazeballs Guacamole Bites will garner much praise and a round of applause (if not a standing ovation)!

Because the only thing better than Guacamole is deep-fried Amazeballs Guacamole Bites! And while there are other versions of deep-fried guacamole inside a (meh!) flour batter (just nope!), nothing beats pairing it with Chicharron (pork rinds) if you would like a keto treat. Or with the alternative, tortilla chips. Both are the traditional accompaniment. And have been since the dawn of time.

You will love these treats because they have it all; they are crunchy outside, tender inside and they are very satisfying.

Serve warm with Salsa Verde for dipping.

Ingredients
  

  • 2 cups homemade Guacamole, recipe in my blog. you can make it with store-bought guacamole too, but homemade will always be better.
  • 2-5 oz bags pork rinds (chicharrones) if making the Keto version
  • or
  • 1-13 oz bag tortilla chips
  • 3 units eggs lightly beaten
  • enough olive/vegetable oil to deep-fry the bites, either in a deep-fryer or a deep pot
  • salt optional

Instructions
 

  • Make the Guacamole, place it in a plastic bowl, cover it and put it in the freezer for 30 minutes to make it easier to work with.
  • Meanwhile, heat the olive/vegetable oil to 375 F. Crush the pork rinds (or tortilla chips) using a food processor or a rolling pin and place crushed ingredient in a shallow dish. Scoop tablespoon size portions of guacamole, roll around in the crushed rind/tortillas chip to coat. Dip bites into the beaten eggs and dredge once more in the rinds/tortillas, for an extra layer of crust.
  • Fry bites in the hot oil for 2- 3 minutes until golden and set on kitchen paper towels to absorb extra oil.
  • If desired, season bites with salt lightly. Serve warm with Salsa Verde (or your favorite salsa) for dipping.
