2-5 ozbagspork rinds (chicharrones) if making the Keto version

1-13 ozbagtortilla chips

enough olive/vegetable oil to deep-fry the bites, either in a deep-fryer or a deep pot

Instructions
Make the Guacamole, place it in a plastic bowl, cover it and put it in the freezer for 30 minutes to make it easier to work with.
Meanwhile, heat the olive/vegetable oil to 375 F. Crush the pork rinds (or tortilla chips) using a food processor or a rolling pin and place crushed ingredient in a shallow dish. Scoop tablespoon size portions of guacamole, roll around in the crushed rind/tortillas chip to coat. Dip bites into the beaten eggs and dredge once more in the rinds/tortillas, for an extra layer of crust.
Fry bites in the hot oil for 2- 3 minutes until golden and set on kitchen paper towels to absorb extra oil.
If desired, season bites with salt lightly. Serve warm with Salsa Verde (or your favorite salsa) for dipping.
