Method
- Make the Guacamole, place it in a plastic bowl, cover it and put it in the freezer for 30 minutes to make it easier to work with.
- Meanwhile, heat the olive/vegetable oil to 375 F. Crush the pork rinds (or tortilla chips) using a food processor or a rolling pin and place crushed ingredient in a shallow dish. Scoop tablespoon size portions of guacamole, roll around in the crushed rind/tortillas chip to coat. Dip bites into the beaten eggs and dredge once more in the rinds/tortillas, for an extra layer of crust.
- Fry bites in the hot oil for 2- 3 minutes until golden and set on kitchen paper towels to absorb extra oil.
- If desired, season bites with salt lightly. Serve warm with Salsa Verde (or your favorite salsa) for dipping.
