Whenever I make these Crispy and Delicious Chicken Taquitos, I conjure up a vast collection of mouth-watering memories.
According to specialists, our strongest senses are smell and taste. It hardly comes as a surprise, as the main events in our lives take place around food.
In my case, these Crispy and Delicious Chiquen Taquitos (Taquitos Dorados de Pollo, in Spanish) evoke happy childhood times. We would come back home from a long day at school to a full platter of these. Pure heaven!
One thing is for sure, whenever mama fixed these Tacos there was no parental struggle whatsoever to cajole, argue or threaten their way into feeding the kids!
These awesome Crispy and Delicious Chicken Taquitos are light enough to be a side dish but filling enough to play the Main Dish role.
Either way, you are going to want to enjoy these Taquitos with some awesome sauce and the best salsa to go with them is this Tomatillo Salsa Verde.
Ingredients
- 1 1/2 cup cooked, shredded chicken seasoned to taste with salt and pepper
- 12 soft corn tortillas
- 12 toothpicks to hold the taquitos together while they fry
- 1/2 cup vegetable oil
- 1 batch of Tomatillo Salsa Verde (recipe here: https://beaneronthefrontier.com/tomatillo-salsa-verde/)
- 1/2 cup shredded Fresco or Blanco (you can use Mexican Cheese Blend instead) cheese to garnish
- 1/2 cup sour cream to garnish
- 1 1/2 cup shredded lettuce to garnish
- Avocado slices to garnish (optional)
Instructions
- If the tortillas are not flexible enough, you can warm them up to make the tacos. Place enough shredded chicken on each tortilla, roll them up somewhat tightly, but not too tight, to form a taco and “pin” securely with a toothpick. Once you start frying them, they will retain their shape.
- Heat oil on medium-high and fry the taquitos until nicely browned all over. “Dorados” means browned and crispy, keep that in mind.
- Once brown and crispy all over, place the taquitos on paper towels to get rid of excess oil. Remove the toothpicks once the taquitos have cooled down a little bit. Serve them warm.
- To serve the taquitos place them on a bed of shredded lettuce, top them with some sour cream, Tomatillo Salsa, top with cheese and avocado slices. Enjoy on their own or with refried beans.
