- 1 lb. small, peeled, cooked shrimp
- 1 cored, chopped, large tomato
- 1/2 onion, finely chopped
- 1 or 2 pickled, seeded, chopped jalapeƱos, plus some of the can pickling juice
- 1/2 cup sliced green olives
- 1/4 cup finely chopped cilantro
- 1/2 cup extra-virgin olive oil
- 1/2 cup ketchup (add more to taste)
- 1/2 cup orange flavored soda
- 1/4 cup Mexican lemon juice (lime juice)
- Salt and pepper to taste
Thaw shrimp. Once thawed mix it with tomatoes, onions, jalapeƱo, olives and cilantro.Stir in liquid ingredients. Salt and pepper to taste. Mix well.
